Taco salads are perfect for the leftover taco night ingredients.

Make your own sandwiches using romaine lettuce leafs!

Caprese Salad

Ingredients:

4 slices fresh tomato (best right from the garden

4 slices fresh mozzarella

Bowl of your favorite mixed greens

Olive oil

Balsamic vinegar

Himalayan salt

Ground black pepper


  1. Add mixed greens to the bowl.
  2. Layer the tomato and mozzarella.
  3. Drizzle olive oil and balsamic vinegar.
  4. Sprinkle himalayan salt and pepper.

Strawberry, Chicken & Feta Salad

Ingredients:

6 oz Cooked chicken breast or tenderloin

Bowl of your favorite mixed greens

1 cup of sliced strawberries

3 tbsp feta cheese

Raspberry vinaigrette

Balsamic reduction

Optional: walnuts


Add all ingredients together and mix. To meal prep, put the dressings in a small container.

Charcuterie Boards can be made with any of your favorite meats, cheeses, crackers and fruits. This might be my favorite part because you can customize it based off your cravings.


Some of my favorite ingredients:

Salami

Pepperoni

Proscuitto 

Sharp Cheddar

Colby Jack

Pepper Jack

Strawberries

Grapes


Optional: olives

Cracker options:

Slice your meats, cheese and fruit and arrange them on a cutting board or plate.

Grilled Cheese & Tomato Soup

One of our favorite comfort food combinations!


Ingredients:

Laurie's Grain Free Bread 

Cheese of choice: Cheddar, Muenster, American

Optional: tomato, bacon, ham

Butter or ghee


Pacific Foods Creamy Tomato Soup


  1. Heat soup in a sauce pan. Add a splash of light cream if desired.
  2. Add butter or ghee to your non-stick pan. 
  3. Make sure both sides of the bread get coated in butter. Toast both sides.
  4. Add cheese to both sides (I use 3 slices). 
  5. Add bacon, ham or tomato if desired. 
  6. Cook until cheese is melted and both sides of the sandwich are crispy.

Ingredients:

Bowl of your favorite mixed greens

Cooked taco meat: chicken or ground beef

Red onions, chopped

Peppers, chopped

Salsa

Mexican blend shredded cheese

Sour Cream

Creamy Cilantro Lime Dressing


Creamy Cilantro Lime Dressing:

1 cup sour cream

Juice of 2 limes

Olive oil: add as much as you need for desired consistency

2 tbsp Cilantro paste

Salt, pepper, garlic powder, onion powder, chili powder to taste

Blend together in a magic bullet or blender.

Lettuce Wraps

Lettuce wraps are a great alternative to bread or buns for your sandwiches and burgers.


Grab a head of romaine lettuce and peel each leaf off. 

Wash and dry the leaves.

Spread your favorite condiments on the romaine.

Layer your sandwich meat and cheese.

Fold the leaf in half and enjoy!
